Lean Recipe:
Appetizer, Oriental Mushroom

Ingredients
  • 1 pound small to medium white mushrooms
  • 1/4 cup water
  • 4 tbsp chopped parsley
  • 2 tbsp white vinegar
  • 2 tbsp soy sauce
  • 4 garlic cloves, peeled, chopped
  • black pepper to taste
  • splash of sesame oil
Instructions
  1. Put mushrooms, water, vinegar, soy sauce and garlic into a saucepan with a tight-fitting lid.
  2. Cover and bring to a boil.
  3. Reduce heat and simmer for 15 minutes. Uncover and simmer until the liquid is reduced by half.
  4. Add pepper and a splash of sesame oil. Toss with parsley. Serve with toothpicks.

This light snack is fairly high in fiber compared to its caloric density. Its great taste should help satiate your appetite.
